Chocolatey Coconut Cookies
    Ingredients:
  • 1/2 cup butter (melted and at room temp)
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/8 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet mini chocolate chips
  • 1 cup flaked or shredded coconut
  • Bakeware: Cookie sheet

Directions:

Mix the flour, baking soda and salt in a small bowl. In a large bowl cream together the butter and sugars using a mixer until they are smooth and creamy (about 1 min.) Add the egg, then the vanilla, mixing until combined. Add your dry ingredients 1/2 cup at a time. Mix until combined.

Fold in your mini chocolate chips and the coconut, cover your bowl with plastic wrap, then chill the dough in the fridge for at least 30 minutes. Preheat the oven to 375 degrees F.

Using a teaspoon scoop the dough into little balls and place them on your cookie sheet about 3 inches apart. Bake for 11-12 minutes or until golden brown. Allow to cool for 5 minutes then pour yourself a big class of milk and indulge!
